
How to make Eto (Yam and Palm oil) and red oil with eggs:
Ingredients
- White yam
- Palm oil
- Eggs
- Onion
- Fresh pepper or ground pepper
- Salt
- Peel and cut the yam into medium pieces, wash, add salt, and boil until very soft.
- Drain the water and mash the hot yam until smooth or slightly lumpy, then set aside.
- Heat palm oil in a pan over low to medium heat without bleaching it.
- Add chopped onions and pepper, and sauté briefly
- Add eggs, season with salt, and scramble gently until just cooked.
- Add the mashed yam to the egg and palm oil mixture and mix well until evenly coated.
- Adjust salt and pepper, then cook on low heat for a few minutes while stirring to prevent burning.
Serve with avocado (pear), fried fish, or pepper sauce.
