
Ingredients for Angwamo
2 cups jasmine rice (or any long-grain rice)
1/4 cup vegetable oil
1/2 medium onion, finely diced
1/4 cup salted beef, diced (can be substituted with bacon or ham)
3 1/2 cups water
1 bouillon cube (chicken or beef)
Salt to taste
Directions for Making Angwamo
Wash the rice
Rinse the rice thoroughly in a colander until the water runs clear. Drain and set aside.
Fry the onions
Heat the vegetable oil in a large pot over medium-high heat. Add the diced onion and fry, stirring occasionally, until golden brown and aromatic (about 12–15 minutes). Remove half of the fried onion and set aside for garnishing.
Cook the salted beef
Add the diced salted beef to the pot and fry for about 5 minutes, stirring frequently, until slightly crispy.
Toast the rice
Add the washed rice to the pot and stir continuously for about 2 minutes, ensuring the grains are well coated with the oil, onions, and beef.
Cook the rice
Pour in the water, add the bouillon cube, and season with salt to taste. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes, or until the rice is fully cooked and the water absorbed. Fluff gently with a fork halfway through cooking.
Serve
Serve hot, topped with the reserved fried onions.
