
Ingredients
- 2 cups black-eyed beans
- ½–¾ cup palm oil
- 2 onions
- 3 tomatoes
- 2 peppers
- 1 tablespoon tomato paste
- Smoked fish, optional
- Salt and seasoning
- Ripe plantains
Directions
- Boil the beans until completely tender.
- Heat palm oil and fry chopped onions.
- Add tomato paste, blended tomatoes and peppers.
- Cook until the sauce thickens and the oil rises to the top.
- Add the cooked beans and smoked fish.
- Simmer for 10–15 minutes, adding a little bean water if necessary.
- Slice ripe plantains and fry until golden brown.
- Serve the beans with fried plantain.
