
Ingredients
- 2 cups rice
- 1 cup black-eyed beans
- 4–6 dried millet sorghum leaves (waakye leaves)
- 1 teaspoon baking soda, optional
- Salt
- Water
Directions
- Wash the beans and boil until partially tender.
- Wash the waakye leaves and add them to the beans.
- Continue cooking until the beans are tender and the water becomes dark reddish-brown.
- Wash the rice and add it to the beans.
- Add salt and enough water to cook the rice.
- Cover and cook on low heat until the rice is soft and fluffy.
- Serve with shito, stew, gari, boiled egg, spaghetti, fried plantain or meat/fish.
