
Ofam is a traditional Ghanaian dish made from mashed overripe plantains mixed with palm oil, ginger, scotch bonnets, onions, and salt, then baked to perfection. It boasts a rich yellow-orange color and offers a delightful balance of sweet and spicy flavors. Ofam can be enjoyed at any time of day and is commonly served with groundnuts for an extra layer of taste and texture.
Ingredients:

700g overripe plantains (about 3 large)

3–5 tablespoons palm oil

7 tablespoons plain flour

1 large onion

½ medium onion, sliced

2 tablespoons grated or blended ginger

3 scotch bonnet peppers

Salt to taste
Instructions:
Preheat your oven to 180°C–200°C.

Peel the plantains and place them in a blender, food processor, or mixing bowl.

Add the large onion, ginger, scotch bonnets, and salt. Blend or mash until smooth, but not overly fine.

In a pan, heat the palm oil and fry the sliced half onion until it’s dark brown. Remove the fried onions and set aside. Let the palm oil cool slightly.

Stir the cooled palm oil into the blended plantain mixture.

Add the flour and mix thoroughly until smooth and lump-free. The batter should be thick, not runny.

Pour the mixture into a greased loaf tin (21 x 11 x 7 cm).

Bake for 30–45 minutes, or until a skewer or toothpick inserted in the center comes out clean.
