
Instructions for making Tomato Stew:
- 8 –10 fresh tomatoes or 1 large tin of canned tomatoes
- 1 large onion
- 3 – 4 cloves garlic
- 1 small piece of ginger
- 2–3 tablespoons tomato paste
- 1–1½ cups vegetable oil or palm oil
- Beef, goat meat, chicken, fish, or eggs
- Salt to taste
- Seasoning
- Spices & Flavor
- 1–2 teaspoons ground pepper or fresh blended pepper
- 1 bay leaf
- Season meat with salt, garlic, ginger, onion, and pepper, then cook until tender, fry and set aside with the stock.
- Blend tomatoes, onion, garlic, ginger, and fresh pepper until smooth.
- Heat oil in a pot over medium heat and fry tomato paste until darkened and the oil separates.
- Carefully add the blended tomato mixture to the pot and stir well.
- Season with salt, seasoning cube, bay leaf, and herbs, then cook uncovered while stirring occasionally.
- Allow the sauce to reduce and thicken until oil rises to the top.
- Add cooked meat, smoked fish (if using), and a little stock, then stir to combine.
- Simmer for 10–15 minutes until the stew is rich, well-flavored, and oil fully settles on top.
- Taste, adjust seasoning, and remove from heat when done.
