Beans Stew with Fried Plantain

One of the easiest Ghanaian dishes to prepare is ripped plantain with beans stew, also known as red red. This favorite dish is mostly served with gari (toasted cassava flour), garnished with an egg and avocado. Check out the recipe below:

Ingredients for making fried plantain
• Ripped plantain
• Vegetable oil
• Salt

Ingredients for making bean stew
• Smoked turkey (or any meat or fish of your choice)
• Salted fish
• Black-eyed peas
• Palm oil
• Onion
• Tomatoes (fresh or canned)
• Pepper
• Garlic
• Ginger
• Salt

Soak beans in water overnight, it will reduce the cooking time. When ready to cook, rinse the beans, add fresh water and cook the beans for an hour until soft. Chop the tomatoes, onions, ginger, and garlic while the beans is cooking. Start by heating the palm oil and add the salted fish, fry for about a minute. Add chopped onion, sauté for a minute, and add the blended sauce. When halfway cooked add your smoked fish or meat and cook for another 10 mins. Then add the cooked beans and salt if needed and cook for another 5 mins and it should be ready.

Prepare the fried plantain by peeling it and cutting it into slices. Heat vegetable oil in a pan over medium heat. When the oil is hot, add the plantain and fry until it is golden brown. Remove and drain on a paper towel.

Serve your plantain and beans with gari, and garnish with avocado or eggs.
