Ghanaian fried rice is a flavorful dish that combines the essence of Asian-style fried rice with a unique Ghanaian touch. It’s a popular and easy-to-make meal, often enjoyed alongside fried chicken and shito (spicy black pepper sauce). Here’s how to prepare it and the ingredients you’ll need:

Ingredients:

  • 2 cups of rice (preferably jasmine or basmati)
  • 3 cups of broth or water
  • 1/4 cup vegetable oil or butter
  • 1 medium onion – chopped
  • 1-2 cloves garlic, minced
  • 1/2 cup mixed vegetables (like carrots, peas, sweet corn, and green beans)
  • 1/2 bell peppers (chopped)
  • 2 eggs, beaten
  • 1/2 cup cooked chicken, beef or shrimp
  • 2 tablespoons soy sauce (adjust to taste)
  • 1 tablespoon curry powder (optional for color and flavor)
  • 1 teaspoon ground pepper (optional)
  • 1 teaspoon of white or black pepper
  • Salt to taste
  • 1 teaspoon ginger (optional, for extra flavor)
  • Chopped spring onions (optional for garnish)

Instructions:

  • Cook the Rice:
    • Wash the rice thoroughly under cold water until the water runs clear.
    • Cook the rice in a pot with about 3 cups of water or broth. Once cooked, allow it to cool for 10–15 minutes so it doesn’t become too sticky when frying.
  • Prepare the Vegetables:
    • In a pan, heat a little oil over medium heat and sauté the vegetables (carrots, peas, and beans) for about 5–7 minutes until tender. Remove and set them aside.
  • Scramble the Eggs:
    • In the same pan, add a little more oil if needed, then pour in the beaten eggs. Scramble and cook until fully set, then remove them and set aside.
  • Fry the Onions and Garlic:
    • In the same pan, add the oil. Once it’s heated, sauté the chopped onions and garlic until fragrant and golden brown, about 5 minutes.
  • Add the Cooked Chicken, beef or Shrimp:
    • If you’re using chicken, beef or shrimp, add it now and stir for a couple of minutes to heat it up.
  • Combine Everything:
    • Add the cooked rice to the pan with the onions, garlic, and chicken/shrimp. Stir well to combine.
    • Add the soy sauce, curry powder, ginger, ground pepper, and salt. Stir everything thoroughly, making sure the rice is evenly coated with the seasonings.
  • Add the Vegetables and Eggs:
    • Stir in the cooked vegetables and scrambled eggs, mixing gently to incorporate everything evenly.
  • Final Stir & Serve:
    • Taste and adjust the seasoning (more soy sauce or salt if needed). Stir for another couple of minutes until everything is heated through.

Garnish with chopped spring onions if desired, and serve hot.
