
Kose, also known as Akara in other parts of West Africa, is a popular Ghanaian dish made from black-eyed peas. It’s typically enjoyed as a breakfast dish or snack and is often served with porridge or pap. The following are the ingredients needed to make kose:
Ingredients:
- 2 cups of dried black-eyed peas
- 1 medium chopped onion
- 1-2 hot peppers
- 1 teaspoon ground ginger (optional)
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- Vegetable oil
How to make it:
- Wash the beans to make sure it’s clean
- Soak the beans in water for about 2 hours
- Drain the beans and rub them between your hands to peel off the skins
- Once peeled, rinse the beans well to remove any remaining skins
- Add the peeled beans, chopped onions (preferably charlotte onions), peppers (if using) and add a little water to blend
- Blend until smooth and creamy. You want the batter to be thick but smooth, but don’t make it too watery
- Transfer the blended mixture into a large bowl. Add salt, black pepper, and ground ginger (optional) and mix well to combine.
- Heat a deep frying pan or pot with enough vegetable oil to deep fry the kose
- Fry until the kose turn golden brown and crisp on the outside
